Shamika’s version of Aunty Lydia’s Tender Coconut Pudding


Here’s your proportions 

1 cup coconut water

1 cup coconut milk

1 1/2 cup tender coconut 

1 cup water 


Soak agar agar in the one cup water. 


Mix together coconut milk, coconut water and tender coconut 


Heat water agar agar mix until agar agar has disappeared 


Pour into the coconut water/milk/pieces mix


Pour in moulds

Once chilled, pop into the fridge for a couple of hours 

And enjoy chilled


Fresh

Delicious 

And looks and tastes like a cloud of tender coconut 🌟
