Sasha's Quiche

Quiche is a classic French dish. Andre
and I are great fans of quiche. There
are many types of quiche, the best known one is Quiche Lorraine.
Here is a quick and easy recipe for
quiche. It does not have a crust but guess what….this quiche is so good you
will not miss the crust. Just thinking
of it makes my mouth water. Quiche can be served hot or cold. This is a must
make recipe and I hope you will enjoy it as much as I do.
Ingredients
- 1 cup chopped onion
- 1 cup sliced fresh mushrooms
- 1 tablespoon vegetable oil
- 1 big bunch spinach chopped
- 1 cup cooked chicken / ham chopped (optional. It tastes great with
just the veggies too)
- 5 eggs
- 1 cup grated paneer
- 1 cup chopped mixed color capsicum
- 1/2 cup corn boiled
- Cheddar and mozzarella cheese to taste (I used two tbsp of each)
- Salt and pepper to taste
Method
1. In a large pan,
saute onion and mushroom in oil until tender.
2. Add remaining
vegetables and chicken / ham
3. Cook and stir
until the excess moisture is evaporated. Cool.
4. Beat eggs. Add
paneer, cheese and mix well.
5. Stir in veg
mixture and pepper and salt and blend well.
6. Spread evenly
into a greased pie plate or quiche dish.
7. Bake at 350° for
40-45 minutes or until a knife inserted in center comes out clean.
